In 1923, in Southeast Asia, the French microbiologist Henri Boulard was looking for new strains of yeast that could be used in fermentation processes, when he came across a microbial discovery. During his visit, there was an outbreak of cholera and he noticed that people who drank a mixture of lychee and mangosteen bark did not develop diarrhea, a classic symptom of cholera. Boulard isolated and identified a strain of yeast extracted from the peel of these tropical fruits which was then named in his honor, "Saccharomyces boulardii" (S.boulardii) and which became the first probiotic yeast in history.

Since 2001, probiotics have been officially defined as living microorganisms which, when administered in adequate amounts, confer a health benefit on the host. Specifically, research links the use of probiotics to beneficial effects for the intestinal system, leading to good digestive and immune health and therefore, overall well-being.

These strains have a major difference with other probiotics: they are not bacteria but yeasts.
